不同时相烹调油烟致大鼠脂质过氧化和锌铜铁变化的研究

探讨烹调油烟是否对肺组织具有损伤作用,采用动式吸入烹调油烟,浓度43 ±4 m g/ m 3 为染毒组,吸入加热空气(24 ~28 ℃) 为阴性对照组,另设阳性B(a)P 组,每组动物18 只,分三个时期(20 天、40 天、60 天) 观察肺组织病理形态改变,检测血清和肺SOD 活性、MDA 及锌、铁、铜含量。烹调油烟可使血清和肺SOD 活性明显低于阴性对照组,MDA含量明显高于对照组( P< 0-01) ,且呈时效关系。锌、铁含量均随染毒时间延长下降,铜含量变化不明显。自由基和脂质过氧化反应及锌、铁等微量元素代谢异常可能与烹调油烟致肺组织损伤有关

To study the damage of lung tissue induced by cooking oil fume(COF),the pathomorphological varians of lung tissue were observed,and the activities of superoxidase dismutase(SOD) and the levels of malondialdehyde (MDA),zinc,iron and copper in serum and lung tissue were determined in 54 rats,which were randomly averagely devided into 3 test groups,such as exposure group dynamically inhaling (43±4)mg/m 3 COF,negative control group inhaling heated air (24~28 ℃),and positive control group infused by benzo(a)pyrene.All of the observations and determinations were done at the day 20th,40th and 60th during the experiment.The results showed that the activities of SOD in serum and lung tissue of exposure group inhaling COF were significantly lower than those of negative control group,the levels of MDA of COF exposure group were significantly higher than those of negative control group,time effect relationships were observed in the activities of SOD and exposure times,and the levels of MDA and exposure times.The levels of zinc and iron in lung tissue and serum decreased as the prolongation of exposure times.The levels of copper revealed no significant variances.It indicated that the production of free redical,the abnormal lipid peroxidation and the abnormal metabolisms of zinc and iron might have some relations to the COF induced lung damange.
